1 p.m.-1:30 p.m. Evaluating commercial
pet treat digestion and safety
Fei He, Ph.D., a research assistant
professor at the University of
Illinois at Urbana-Champaign,
discusses the assessment of safety
and digestibility of commercial
treats, produced by various processing methods
and formulations, in addition to functionality
and nutritional compositions as a quality control
measure using in vitro technology. While treats are
widely used by dog and cat owners in the U.S. and
around the world, safety of these products still is a
major concern. Minimizing risk of gastrointestinal
blockage, perforation, and (or) intolerance is critical
in treat development. Results on the safety and
digestibility of commercial treats will be presented.
He received her doctorate in food science from the
University of Massachusetts Amherst in 2014. From
2014-2017, she worked as a postdoc research associate at Oregon State University, focusing on flavor
and aroma analysis in food and beverages. In 2017,
He joined the Department of Animal Sciences at
University of Illinois at Urbana-Champaign. Currently,
she is a research assistant professor, and her research
focuses on pet food safety, chemical analysis of feed
and food ingredients, and complete and balanced
pet foods and pet treats. He also is the laboratory
manager in Dr. Maria Godoy's laboratory in the Illinois
Companion Animal Nutrition Program (I-CAN) and
provides analytical testing and new method development for the feed and pet food industries.
1:30 p.m.-2 p.m. How storage time and
antioxidants affect oxidation measures
in frozen and freeze-dried meat patties
Megan Morts, a graduate
research assistant at Kansas State
University, provides results from
oxidation measurements in frozen
and freeze-dried meat patties
over extended time on the shelf. Pet food is a $30

billon industry with 4 percent annual growth (APPA,
2017), and new food forms and novel ingredients
are a big reason for this growth. The fastest
growing food categories are raw, frozen and freezedried product. These often contain a limited set of
ingredients and are less processed when compared
to extruded or canned options. However, the shelflife of raw, frozen, and freeze-dried products are
often expected to be comparable to the standard
food forms.
Morts is currently in her third year as a Ph.D.
student in the pet food processing program lab of
Greg Aldrich, Ph.D., at Kansas State University.
The current focus of her research is shelf-life and
quality of minimally processed pet food or pet food
ingredients. Prior to her Ph.D. studies, she completed her master's and bachelor's degrees in animal
science at Kansas State University. The focus of her
master's work was mix uniformity in diets fed to
swine and poultry. She has previously presented
research at Petfood Forum, AOCS, IFT, ASAS and
PSA national meetings.
2 p.m.-2:30 p.m. Innovation in pet food
stabilization: Selecting the right natural
antioxidants for rendering meals and
stabilizing pet foods from the beginning
Nicolas Coneggo, a scientist with
Videka-Diana Pet Food, demonstrates the application of natural
antioxidants at different steps of the
rendering and pet food processing,
in various product matrices from the raw materials to
the final coating fats. Recommendations will be given
on how to choose the right natural antioxidants for
rendering meals and stabilize your pet food products
from the very beginning to achieve the utmost
freshness. Methods and model systems for evaluating
natural antioxidants performance in poultry meals will
be presented.
Coneggo holds a master's degree in food science
from Polytech' Montpellier (France). Before joining
Videka-Diana Pet Food, he worked in the food and
beverage industry, focusing on the use of natural
ingredients and how to increase their shelf life
in finished products. He has spent the last seven
years at Videka-Diana Pet Food, working on natural

antioxidants formulation, product development
and technical support for the pet food industry.
Coneggo worked extensively on the rendering
and dry pet food processes, as well as emerging
production technologies, assessing the antioxidants
performance through shelf life studies and new
analytical tools.
3 p.m.-3:30 p.m. Efficacy of specialty
animal proteins for grain-free and limited
ingredient diets
William Henry, director of
technology/R&D for Extru-Tech Inc.,
discusses a specific study executed
to determine the efficacy of replacing typical binders with specialty
animal-based proteins. The presentation will walk the
attendees through the entire study, beginning with the
development of the study protocol (formulation design,
decision tree, risk assessment, equipment profile,
process profile), through protocol execution and ending
with a review of the resultant product analysis and
diet performance (final product specifications, kibble
integrity analysis, palatability).
Henry holds associate's and bachelor's degrees in
engineering. He has been an integral part of the pet
food extrusion industry for more than 20 years. For
the past 12 years, his focus has been in the area of
research, both in the refinement of the single screw
extruder production architecture and the development/investigation of new product development for
the pet food market.
3:30 p.m.-4 p.m. Oxidation and its
challenges: Making sense of animal
protein meal oxidation values for pet food
B.J. Bench, Ph.D., director of food
safety and quality assurance for
Tyson Foods Ingredient Solutions
Group, and S.P.J. Namal Senanayake, Ph.D., scientific manager for
CFS North America/Camlin Fine Sciences, address the
importance of standardizing fat extraction procedures
across the pet food industry in conjunction with various
methods of determining peroxide values as an indicator
of primary oxidation products. Most pet food products
consist of rendered animal protein meals as one of
the major building blocks in pet food diets. Accurately
